Ingredients

Servings
  • 1 lb Thai red peppers , stemmed and seeded (or red jalapeño peppers, red serrano peppers or cayenne peppers)
  • 2 tablespoons rice vinegar
  • 2 cloves garlic
  • 1 tablespoon salt fine

Optional additions

  • 2 tablespoons calamansi juice
  • 1 teaspoon palm sugar

Equipment

  • Mortar and pestle
  • food processor

Instructions

  1. Place the peppers in a mortar.
  2. Add the garlic and salt to the chili peppers and, using a pestle, mash everything until a fine paste is obtained.
  3. Add palm sugar and calamansi juice (optional)
  4. Mix well.
  5. Sauté in a pan over low to medium heat for 5 minutes, add rice vinegar, and continue cooking for another 5 minutes.
  6. Store the sambal in the refrigerator in a glass jar for a few days.

Notes

  • Instead of a mortar and pestle, which is the traditional method, a food processor can also be used. Lime can be substituted for calamansi.
