Sambal
Report
Sambal, or sambal oelek, is a sauce or paste made from chili peppers, popular in Malaysia, Indonesia, Sri Lanka, Brunei, and Singapore.

Ingredients
- 1 lb Thai red peppers , stemmed and seeded (or red jalapeño peppers, red serrano peppers or cayenne peppers)
- 2 tablespoons rice vinegar
- 2 cloves garlic
- 1 tablespoon fine salt
Optional additions
- 2 tablespoons calamansi juice
- 1 teaspoon palm sugar
Equipment
- Mortar and pestle
- food processor
Instructions
- Place the peppers in a mortar.
- Add the garlic and salt to the chili peppers and, using a pestle, mash everything until a fine paste is obtained.
- Add palm sugar and calamansi juice (optional)
- Mix well.
- Sauté in a pan over low to medium heat for 5 minutes, add rice vinegar, and continue cooking for another 5 minutes.
- Store the sambal in the refrigerator in a glass jar for a few days.
Notes
- Instead of a mortar and pestle, which is the traditional method, a food processor can also be used. Lime can be substituted for calamansi.
