Samoa Cookie Overnight Oats
Description
This recipe starts by soaking dates in hot water, then blending them with water and salt into a smooth salted date caramel. Rolled oats, chia seeds, vegan chocolate chips, and non-dairy milk are mixed with date caramel and optional almond or vanilla extract, then pressed and chilled to hydrate the oats thoroughly.
Before serving, the oats are decorated with toasted shredded coconut and drizzled with melted chocolate mixed with non-dairy milk to create a ganache-like topping. Fresh fruit such as berries or sliced banana adds brightness. The combination replicates elements of a Samoa cookie through flavors of caramel, coconut, and chocolate in a nutritious, no-cook preparation.

Ingredients
salted date caramel:
- 8 dates
- 1/2 cup water hot
- 1/8 tsp salt
Overnight Oats:
- 3/4 cup rolled oats gluten free if necessary, or use other grain flakes, old fashioned
- 2 teaspoon chia seeds
- 2-3 teaspoons chocolate chips vegan, mini
- 3/4 cup non-dairy milk
- 2 almond extract optional, or vanilla extract, drops of
Garnishes:
- 2 tbsp coconut toast over medium low for a few mins, toasted, shredded
- 2 tbsp chocolate chips vegan
- 2 tsp non-dairy milk
- berries other fruits
- banana other fruits
Instructions
- Soak the dates in 1/2 cup hot water for 15 mins if you havent already. Then Blend with the soaking water and salt until smooth and creamy.
- Add oats, chia, chocolate chips and non dairy milk to a bowl. Add 3 tbsp date caramel, a pinch of salt. Add almond extract or vanilla extract (optional). I like almond here.
- Mix everything and press the oats in so that all oats are soaked. Chill for 10 mins. Transfer to jars. Alternatively, you can mix everything in 1 mason jar.
- Top with some date caramel or swirl it in. Then top generously with toasted coconut.
- Melt the chocolate chips with the non dairy milk over a double boiler or in microwave. Drizzle over the coconut. You can drizzle the chocolate lightly or pour some in for a thin ganache like layer.
- Seal and refrigerate overnight. Warm lightly if needed, before serving. Add berries and sliced fruits of choice and serve.

- Saturate the dates in hot water for at least 15 minutes before blending to achieve a smooth salted caramel texture.
- Chill overnight to allow oats and chia seeds to fully absorb moisture and soften.
- Toast shredded coconut over medium-low heat for a few minutes to enhance flavor before topping.
