Ingredients

Servings

For the dough

  • 1 lb maida flour (or all-purpose flour)
  • 4 tablespoons ghee (clarified butter) or rapeseed oil
  • ¾ cup water , more or less
  • 2 tablespoons lassi (or yogurt)
  • 1 teaspoon cardamom ground seeds
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • neutral cooking oil for frying, generic cooking oil

For the filling

  • 5 potato cooked and mashed
  • 1 onion , finely diced
  • 2 cloves garlic , crushed
  • 1 carrot , diced (optional)
  • ½ lb pea
  • 1 green hot pepper , cut into thin strips
  • 1 (1-inch / 2,5 cm) piece ginger grated, fresh
  • 1 teaspoon cumin
  • 1 teaspoon garam masala
  • ½ teaspoon ground coriander
  • ½ teaspoon cardamom ground seeds
  • ½ teaspoon Turmeric
  • ½ bunch cilantro , finely chopped
  • 3 tablespoons sunflower oil
  • salt
  • black pepper

For the glue

  • 3 tablespoons flour
  • 3 tablespoons water hot

Instructions

Dough

  1. In the bowl of a stand mixer, combine the flour, cardamom, baking soda and salt.
  2. Add ghee and lassi and mix until the dough becomes sandy.
  3. Pour ½ cup of water and, using the dough hook, mix for 4 minutes.
  4. Add remaining water gradually if necessary.
  5. The dough should quickly become soft, smooth and elastic.
  6. Form a ball with the dough, lightly coat the entire surface with oil, and cover with a cloth.
  7. Set aside at room temperature for 1 hour.

Filling

  1. Heat oil in a skillet over medium heat and pour the onion and ginger.
  2. Sauté for 2 minutes until the onion is soft, then add the garlic.
  3. Sauté for a minute.
  4. Add peas, hot pepper and carrot and cook on low heat for 5 minutes.
  5. Finally, add the mashed potatoes and the other ingredients.
  6. Mix well and cook over low heat, covered for 5 minutes.

Glue

  1. Vigorously mix the flour and water until reaching the consistency of a thick cream.

Assembly

  1. Divide dough 8 equal pieces.
  2. Take each piece of dough and roll it between the palms to form a smooth ball.
  3. Roll out the dough thinly and cut it in half to get two half circles.
  4. Use a brush or your fingers to apply some glue to the edges of the dough.
  5. Then, form a cone.
  6. Fold and stuff the cone with the mixture of mashed potatoes, carrots and peas, as shown in this video.

Cooking

  1. Heat oil in a large skillet.
  2. Carefully slide samosas in the oil and fry until golden.
  3. If you do not serve the samosas immediately, deep fry them again for 1 minute before serving.
  4. Serve hot or warm with cilantro sauce or tamarind chutney.
