San Marzano Tomato Sauce

This rich delicious easy thick tomato sauce is perfectly ready in minutes!

Ingredients

Servings
  • 2 tbs butter optional – 2 tbs vegetable oil if keeping vegan
  • ½ onion chopped small
  • 3 cloves garlic minced
  • 1 oz tomato sauce it is the bigger sized can of sauce, can
  • 1 oz tomato paste canned
  • 1 oz San Marzano Tomatoes
  • 1 chipotle pepper dried, heavy pinch
  • 1 teaspoon brown sugar
  • salt to taste
  • black pepper to taste
  • 3 tbs heavy cream optional – 3 tbs almond milk if keeping vegan

Instructions

  1. In a sauce pot, over medium heat,  melt the butter.  Add the onion and cook until soft – 2-3 minutes. Add the garlic. Cook for 2 minutes more.
  2. Add the tomato sauce, paste and san marzano tomatoes.  Use a potato masher and smash the san marzano tomatoes to release the juices.
  3. Add the chipotle pepper, sugar, salt and pepper. 
  4. Heat over medium heat until the sauce comes to a simmer. Allow to simmer as long as you desire.  See notes. 
  5. 5 minutes before serving, add the cream, taste and add more salt and pepper as desired.

Notes

  • If you don't have fresh onions it is OK to substitute 1 Tbs onion powder OR ½ cup of frozen chopped onion.
  • Substitution of 1 Tbs of garlic powder OR 1 Tbs of jarred chopped garlic is OK to substitute for the fresh garlic. 
  • When smashing the tomatoes with the potato smasher, just gently smash and that will leave the tomato sauce slightly chunky.  
  • As the sauce cooks, the chunks of tomato will disintegrate. 
  • If you simmer the sauce for too long and it becomes too thick, simply add some water and stir. 
  • This sauce is perfect with my meatballs! 
  • If you prefer sauce with some ground meat, simply brown some hamburger or sausage or a mixture of the two and pour the contents into this sauce. 
  • This sauce can be multiplied for as large a crowd as  you want to cook for. 
  • Use the leftovers to make a meatball sandwich!
