Sandia Loca (Crazy Watermelon)
Description
This recipe starts with a halved watermelon standing flat, from which square slices are cut and scooped out to create watermelon chunks. These are combined with cubed cucumber and jicama to add refreshing crunch and mild sweetness. Japanese peanuts introduce a nutty flavor and additional texture. Various Mexican candies are mixed in to add bursts of sweet or spicy notes.
Adding chamoy—a tangy and slightly spicy sauce—along with chili lime seasoning and fresh lime juice seasons the mix, providing a lively contrast balancing the sweetness of the fruits and candy. The dish is not cooked but assembled to emphasize fresh and intense flavors and textural contrasts.
Sandia Loca is typically served as a snack or refreshing side in warm weather and is enjoyed immediately to retain the freshness and crispness of the ingredients. The colorful presentation in the watermelon rind adds a festive touch for casual gatherings or street food style serving.
