Description
Sauerkraut Salad mixes drained sauerkraut with diced sweet apples, finely chopped yellow onion, and chives for a fresh, herbaceous note. The dressing is a simple blend of sunflower oil—chosen to complement without overpowering—honey for gentle sweetness, and salt to taste. After tossing all ingredients, the salad is chilled for at least an hour, allowing flavors to meld and the sauerkraut to soften slightly without losing its pleasant crunch.
This salad can be served cold or at room temperature and makes a bright, tangy side dish that balances richness or heavier foods. Using raw or lightly fermented sauerkraut preserves probiotics and a crisper texture, while quality jarred versions offer a milder flavor.
Ingredients
- 18 ounces sauerkraut drained (raw/fermented sauerkraut has the probiotics and is fresher/crisper, but you can substitute quality German canned/jarred sauerkraut for a milder flavor, approx. 3 cups

- 2 medium apple diced, sweet
- 1/2 cup yellow onion finely chopped
- 1 1/2 tablespoons chives chopped
- 2 tablespoon sunflower oil (the sunflower oil flavor is an important element, do not substitute with another oil)
- 1-2 teaspoons honey or cane sugar
- salt to taste
Instructions
- Combine the sauerkraut, apples, onion and chives in a large bowl. Whisk together the oil, honey and salt. Pour over the salad and stir to combine. Add more salt as needed. Cover and refrigerate for at least one hour before serving. Can be served cold or at room temperature.
