Sausage and Bean Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion diced, small
  • 1 cup carrot diced
  • ½ cup celery diced
  • 3 garlic chopped, cloves
  • 1 9 oz Italian sausage gluten-free if necessary, sweet, removed from casings, package of
  • 2 cannellini beans rinsed, can
  • 1 28 oz diced tomatoes undrained, canned
  • 1 32 oz chicken stock gluten-free if necessary, box
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper fresh ground
  • 2 teaspoon thyme dried
  • 1 bay leaf
  • Parmesan Cheese optional, for garnish

Instructions

  1. Heat oil in a dutch oven over medium-high heat.
  2. Add chopped onion, carrot, celery and garlic. Cook 5 minutes and remove from pan.
  3. Add sausage and cook for about 8 minutes or so, crumbling as you go.
  4. Add onion mixture back to pan, then add all remaining ingredients except parmesan cheese.
  5. Bring to a boil and stir, then reduce heat to simmer and cook for about 10-15 minutes.
  6. Remove bay leaf.
  7. Serve hot with parmesan cheese and crusty bread for dipping.
