Description
Sausage and Pepper Chipotle Grilled Cheese combines slices of hot Italian sausage with colorful bell peppers and onions, sautéed until tender. The cheese blend includes grated gouda, smoky chipotle cheddar, and melty American, Muenster, or Gruyere, layered generously between buttered rye bread. Cooking in a pan allows the sandwich to develop a crispy, golden exterior while melting the cheeses inside to hold the filling securely.
The sandwich offers a savory and slightly smoky flavor profile, balanced by the sweetness of the bell peppers and mild sharpness from the gouda and cheddar. The rye bread provides a robust base with a slight tang that complements the filling ingredients well.
This grilled cheese works well as a comforting lunch or dinner option. It pairs nicely with a simple green salad or a bowl of soup for a complete meal. Buttering the bread both before and during grilling ensures an even crispness and richness.
If chipotle cheddar isn’t available, mixing some adobo sauce from canned chipotle chiles into shredded cheese can substitute, adding a smoky heat. Adjust the amount of chipotle to taste for desired spiciness.
Ingredients
- 1 Italian sausage hot
- 1/4-1/2 red bell pepper sliced
- 1/4-1/2 bell pepper orange, sliced
- 1/4-1/2 onion small white or yellow, sliced thin
- 2-4 ounces gouda cheese (grated)
- 2-4 ounces chipotle cheddar cheese (grated)
- deli cheese American, Muenster, or Gruyere, a few slices, melty, favorite
- 4 lices rye bread
- 1-2 TBSP butter
- parsley to taste
Instructions
- First grab your sausage. Once you stop snickering, cook it via your favorite method. Slice thin.
- Grate your cheeses and season with a few sprinkles of parsley, if desired.
- Next heat a pan with half the butter on medium-high heat, add your bread and a small pile of grated cheese and top with a slice of deli cheese. Since melted cheese does a stand-up job of holding together a sandwich, I add cheese to the bread, then pile on the sausage, peppers and onion, then top it with even more grated and sliced cheese. Just pack it all in. You'll thank me later when you're face-first in ooey gooey amazingness.
- Use a spatula to flip the grilled cheese, adding the rest of the butter to the pan to coat the virgin bread. I've also seen friends simply heavily butter both slices of bread before proceeding and it works just as well. Whatever your method of choice, just go with it!
Notes
- Using adobo sauce stirred into regular cheese can replace chipotle cheddar for a smoky flavor.
- Butter the bread before cooking and add more butter when flipping for best crust and richness.
- Use thin slices of cooked sausage so it layers well and heats through quickly in the sandwich.
