Sausage and Veggie Grill Packets
Description
This recipe mixes sausage slices, ears of sweet corn cut into wheels, and assorted chopped vegetables including bell peppers, red onion, mushrooms, Brussels sprouts, zucchini, yellow squash, asparagus, watermelon radish, and cherry tomatoes. The mixture is tossed thoroughly with olive oil, Italian seasoning, salt, and fresh cracked black pepper to coat all ingredients evenly.
Divided among four large foil sheets, the packets are sealed tightly to keep steam and juices inside, lying relatively flat to ensure good heat contact and roasting instead of steaming. Cooking on a hot grill or under a broiler for 20–30 minutes cooks the sausage and vegetables through while allowing some caramelization of surfaces.
The packets offer flexibility with seasoning blends and sausage types. They’re ideal for easy outdoor cooking or broiling indoors, making a balanced, flavorful meal with protein and a range of vegetables. Opening the packets carefully to avoid hot steam is advised.
Kid-friendly variations can be made by substituting hot dogs or plain sausages and adjusting seasoning blends. Vegetarians can replace sausage with firm tofu. Suggested seasonings include Cajun, barbecue, Mexican, or herbes de Provence to complement the meat.
Ingredients
- 4 small heads garlic
- 2 Tbsp Italian seasoning
- salt to taste, fresh cracked
- black pepper to taste, fresh cracked
- 1/4 cup olive oil plus more for drizzling
- 4 sausage any variety, sliced on the bias (I used spinach and feta chicken sausage, cooked
- 2 ears sweet corn cut in 2 inch wheels
4-5 cups assorted vegetables, chopped in bite sized pieces ~ I used the following
- 2 bell pepper assorted colors, cut into chunks
- 1/2 red onion peeled and cut in 1 inch chunks
- 4 large white mushrooms quartered
- 4 Brussels sprouts trimmed and halved
- 1 small zucchini sliced
- 1 small yellow summer squash sliced
- 2 pears asparagus cut in 2 inch pieces
- 1 watermelon radish sliced in half moons
- 8 cherry tomato uncut
Instructions
- Put all the ingredients in a large mixing bowl and toss to coat everything well. Use a bit more olive oil if needed.
- Divide between 4 pieces of foil. Don't mound them up too much. Drizzle with more olive oil if you like.
- Bring up the long ends and fold over, like a lunch bag. Roll up the sides so that no juice can escape. Note that you want your packets to be relatively flat, so the food makes contact with the high heat of the grill or broiler and roasts, rather than steams.
- Place the packets right on a hot grill, cover, and cook for about 20-30 minutes. You can also broil the packets, on high, on the rack nearest the flame (place a baking sheet or large piece of foil below to catch any stray drips.) Note: if your packets are cold from the refrigerator they may take extra time.
- Be careful when opening the packets, the steam will be very hot.
Notes
- Use seasoning blends that complement your choice of sausage, like Cajun, barbecue, Mexican, or herbes de Provence.
- Firm tofu makes a suitable vegetarian substitute for sausage in this recipe.
- For children, sliced hot dogs can be used instead of sausage to make kid-friendly packets.
