Ingredients
- 1 pound ground pork sausage
- 1/2 sweet onion diced
- 1/4 cup unsalted butter +1 tablespoon for brushing biscuits
- 1/3 cup all purpose flour
- 3 cups whole milk slightly warmed
- 6 ounces grated colby jack cheese
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 12 frozen biscuits We recommend Pillsbury Southern Homestyle biscuits
- 1 tablespoon chopped chives

Instructions
- Preheat the oven to 350°F.
- Add the pork sausage and the diced onions to a large 12” Skillet and cook over medium-high heat until no pink remains in the sausage meat. Remove the sausage mixture and keep to the side. Use a paper towel to clean the skillet.
- Add 1/4 cup butter to the skillet and melt over medium heat.
- Add the flour and using a whisk to stir, cook for about 1-2 minutes.
- Slowly pour a little of the warm milk at a time, constantly stirring the ‘roux’ so that no lumps form. Continue to do this with all the milk, the simmer for 5 minutes until the gravy has thickened.
- Add the grated cheese and whisk together until melted.
- Add the sausage mixture back to the skillet and mix well.
- Pour this gravy into a lightly greased 9x13” casserole dish.
- Top with the 12 frozen biscuits then place into the oven to bake for 30 minutes, or until the biscuits have a golden brown color.
- Remove from the oven and brush the melted butter over the top of all the biscuits.
- Sprinkle chopped chives over the top.
