Sausage Breakfast Casserole

This Sausage Breakfast Casserole layers cooked breakfast sausage and seasoned hash browns with cheddar cheese, then bakes them in a rich mixture of eggs and milk. The casserole sets into a hearty, savory dish with a melted cheese topping that is ideal for a filling breakfast or brunch.

Description

The recipe starts by cooking sausage until browned and crumbly, which is then layered over a base of thawed hash browns containing onion and peppers. Half of the shredded cheddar cheese is sprinkled on the sausage before pouring over a beaten mixture of eggs, milk, salt, and pepper. The casserole bakes at 350°F until firm, then topped with the remaining cheese and baked briefly more to melt.

The dish offers a combination of crispy edges from the hash browns, savory sausage flavor, and creamy texture from the baked eggs. It is served hot and can be prepared the night before by assembling and refrigerating before baking in the morning, making it convenient for busy days.
