Sausage Cheddar and Jalapeño Egg Bites

A sausage cheddar and jalapeño egg bite that cooks up fluffy like the Starbucks sous vide egg bites.

Ingredients
- 5 eggs
- 3/4 cup cottage cheese
- 1/2 tsp salt
- 1/3 cup cheddar cheese
- 4 links pork breakfast sausage - I used Jones Dairy Farm Golden Brown Pork Sausage
- 1 small jalapeño pepper
Instructions
Instant Pot Instructions
- Heat a frying pan over medium heat and add 4 link of frozen pork breakfast to the pan and cook until golden brown on all sides about 8-10 minutes
- Add cottage cheese eggs and salt to a blender and blend on high until a smooth mixture remains
- Spray a silicone egg mold with spray oil to grease
- Add chopped sausage to each of the mold slots along with chopped jalapeño and cheddar cheese
- Pour egg mixture and cottage cheese into each of the egg mold slots until almost compleltely full
- Pour 1 cup water into the bottom of an Instant Pot
- Place the egg molds on a metal rack and lower in the Instant Pot
- Close the lid and set the vent to sealing
- Cook on Steam for 10 minutes - the Instant Pot will come to pressure and then steam for 10 minutes
- Once the Instant Pot beeps, manually release pressure and remove the lid
- Allow the egg bites to cool almost completely before removing from the molds

- Place the egg molds on a metal rack and lower into the pot
- Turn the heat on high and allow the water to come to boil - about 3 minutes
- Cover the pot with a lid and reduce the heat to medium-low allow the water to simmer and steam the egg bites for 12 minutes
- Remove the lid and remove the pot from the heat
- Allow the egg bites to cool almost completely before removing from the molds
