Bacon Egg and Cheese Egg Bites

Ingredients

  • 6 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup cottage cheese
  • 1 teaspoon hot sauce (such as Tabasco or Tapatio)
  • 5 lices Bacon (cut into small pieces and cooked)
  • 1 cup sharp cheddar cheese (grated)

Instructions

  1. Preheat oven to 300 degrees.
  2. Heat a large skillet over medium heat. Cut bacon into small pieces. Cook until crispy, about 8-10 minutes. Remove and set aside on a paper-towel-lined plate.
  3. In a blender, add eggs, salt, pepper, cottage cheese, and hot sauce. Puree until smooth.
  4. Spray a muffin tin with non-stick cooking spray. Pour egg mixture about 2/3 full. Sprinkle in bacon and cheese and stir using a spoon or butter knife.
  5. Carefully heat some water in the microwave. Carefully pour into a 9 x 13 pan. Place in the bottom rack of the oven. This is what will create steam in order to slowly temper and cook the eggs.
  6. Place the muffin tin on another oven rack. Bake for 20-23 minutes or until eggs are cooked through. Remove from the oven and let set up for 5 minutes before serving.
  7. Serve with salsa, sour cream, and fresh cilantro.

Notes

  • may substitute any type of veggies -- red peppers, red onions, green onions, broccoli, etc. 
  • may substitute any meats -- ham, sausage, chicken, etc.
