Ingredients

For the Sausage

  • 1 lb ground pork 90/10 any ground meat is okay
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cayenne pepper optional for spice
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • tsp rubbed sage
  • 1 tbsp oil

For the Oatmeal

  • 3 cups old fashioned oats
  • ½ cup oat flour any flour is fine
  • 2 eggs
  • 2 cups 2% milk
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 medium green pepper
  • 1 small onion
  • 1 tbsp oil

Instructions

For the Breakfast Sausage and Peppers

  1. In a large bowl add the pork with all of the associated seasonings. Mix thoroughly to incorporate into the meat.
  2. In a large skillet over medium high heat, add 1 tbsp of oil and add in the sausage. Brown it on both sides and cook it until no pink color remains. Be careful not to burn the sugars.
  3. Break up the sausage into small pieces as it cooks and set aside until you are ready for it later.
  4. While the sausage is cooking cut your onion and pepper into a small dice. Once the sausage has finished, remove it from the pan and add another 1 tbsp of oil. Add the onions and peppers and cook for a few minutes to develop color. Season lightly with salt.

For the Baked Oatmeal

  1. Preheat your oven to 375 °F (191 °C).
  2. In a large bowl, beat 2 eggs, add the milk and cottage cheese and mix together.
  3. Next add in the oats, flour, baking powder, salt, sausage and peppers, and cheddar cheese. Mix to combine.
  4. Spray a 13"x9" pan with oil and add the oat mixture. Spread evenly across the pan.
  5. Bake for 40-45 minutes or until set in the center.

Plating

  1. This recipe makes 6 servings. Cut the oatmeal into 6 equal pieces.
