Ingredients
- 1/2 cup rolled oats
- 1 cup low-sodium chicken broth, or water
- 1 chicken sausage, sliced and cooked
- 1 large egg, sunnyside up or how you desire
- 1/4 cup arugula
- 1/2 avocado, sliced
- 1/4 cup cherry tomatoes, halved
- everything bagel seasoning, for garnish
Instructions
- In a small pot, combine 1/2 cup rolled oats and 1 cup low-sodium chicken broth, over medium-high heat.
- Once it comes to a low boil, reduce the heat and let it simmer until it reaches your desired thickness. Stir occasionally until the oats are cooked through and creamy.
- Remove the pot from the heat and pour the oatmeal into a bowl.
- To prepare the toppings, cook 1 large egg, how you desire. Heat 1 chicken sausage, in the air fryer or according to package instructions. Slice your 1/4 cup cherry tomatoes, and 1/2 avocado,.
- To assemble the bowl, layer your egg, sausage, tomatoes, avocado, and 1/4 cup arugula on top of the oatmeal.
- Sprinkle with everything bagel seasoning, and enjoy!
