Description
Sausage Egg Muffins are individual baked egg cups featuring finely diced onion and pepper sautéed until tender. The eggs are whisked with seasonings, then poured into prepared muffin tins, topped with cooked sausage crumbles and cheddar cheese before baking. This method produces a set, firm egg muffin with a balanced mix of mild vegetables and savory sausage flavors.
The muffins have a tender interior from the eggs combined with the melted cheese and bits of sausage, complemented by the softened diced vegetables. Baking in muffin tins ensures even cooking and convenient portion sizes.
Ideal for a quick breakfast or brunch serving, these muffins can be enjoyed warm right from the tin. Using fully cooked sausage simplifies preparation, but raw sausage can be cooked alongside the veggies prior to assembly for freshness.
Ingredients
- 3/4 cup onion finely diced
- 3/4 cup pepper finely diced
- 12 egg
- salt to taste
- black pepper to taste
- 1/2 cup breakfast sausage I used fully cooked Jimmy Dean Turkey Sausage crumbles, crumbles
- 1/4 cup cheddar cheese
Instructions
- Preheat oven to 350° F. Spray 12 muffin tins well with nonstick cooking spray. Set aside.
- Place a medium skillet over medium heat. Spray with nonstick cooking spray and sauté veggies with salt and pepper until tender, about 4 minutes. Remove from heat and add 1 tablespoon into the bottom of each muffin tin.
- Crack all eggs into a large liquid measuring cup. Add salt and pepper and whisk until well scrambled. Add 3-4 tablespoons to each muffin tin and do your best to divide evenly.
- Add sausage* and cheese to the top of each muffin. Bake 15-20 minutes or until egg is completely cooked.
- Cool 3-5 minutes before removing from each muffin tin. Serve warm.
Notes
- If using raw sausage, cook it thoroughly with the vegetables before adding to the muffin tins.
- Carefully divide the egg mixture among the tins for consistent muffin sizes and even cooking.
- Let muffins cool briefly after baking to firm up before removing from tins.
