Sausage Gnocchi Soup

This Sausage Gnocchi Soup combines Italian sausage with tender potato gnocchi, fresh spinach, and a tomato-based broth enhanced by garlic and Italian seasoning. The sautéed vegetables add subtle sweetness and texture, while the fresh basil brightens the soup. It's hearty and comforting, making it a satisfying option for cooler days or anytime you desire a warming, flavorful soup with soft gnocchi and savory sausage.

Description

Sausage Gnocchi Soup features Italian sausage browned and cooked with sautéed onions, celery, and carrots, creating a rich base. Adding garlic along with chicken broth and tomato sauce builds a savory, slightly tangy broth. Potato gnocchi cooks directly in the soup, offering a soft, pillowy texture that complements the meaty sausage. Fresh spinach and basil stirred in near the end add color and freshness, balancing the earthiness of the vegetables and meat.

The soup is simmered gently to meld the flavors and tenderize the gnocchi without overcooking. Seasoned with salt, pepper, and Italian herbs, it presents a classic blend of Mediterranean-inspired flavors. This soup is filling and warm, ideal as a main course or accompanied by crusty bread for dipping.

The recipe uses ground Italian sausage, which can be prepared by removing casings if preferred. Fresh ingredients throughout keep the flavors straightforward yet well-rounded. Regular stirring during simmering prevents sticking and ensures even cooking.

Ingredients

Servings
  • 1 tablespoon olive oil
  • 16 ounces Italian sausage see note
  • 1/2 medium onion chopped
  • 2 ticks celery chopped
  • 2 medium carrot peeled & sliced fairly thin
  • 4 cloves garlic minced
  • 4 cups chicken broth
  • 1 (14 ounce) can tomato sauce
  • 1 pound potato gnocchi uncooked
  • 1/2 teaspoon Italian seasoning
  • 2-3 cups baby spinach packed, fresh
  • basil handful, fresh
  • salt to taste
  • black pepper to taste

Instructions

  1. Add the oil and sausage to a large soup pot. Cook over medium-high heat until browned (about 10 minutes), then transfer to a paper towel lined plate.
  2. If the pot is looking a bit dry, add a splash of olive oil to it. Add the onion, celery, and carrots to the pot, and sauté for 8-10 minutes, until the onions are lightly browned and the celery and carrots have softened a bit.
  3. Stir in the garlic and cook for about 30 seconds.
  4. Add the sausage back to the pot, and then add in the chicken broth, tomato sauce, gnocchi, and Italian seasoning. Bring the soup to a boil, and then reduce the heat to medium-low and simmer for 10 minutes with the lid slightly open. Give it a stir a couple of times so that nothing is sticking to the bottom of the pot.
  5. Stir in the spinach and basil, season with salt & pepper as needed, and enjoy!

Notes

  • Use ground Italian sausage, either with or without casings, depending on preference.
  • Stir soup occasionally while simmering to prevent ingredients from sticking.
  • Fresh basil added at the end helps retain its bright flavor and aroma.
  • This recipe appears in the soup section of the Salt & Lavender: Everyday Essentials cookbook.
