Sausage Gravy

  • 1 pound pork sausage or breakfast sausage, ground
  • cup all-purpose flour
  • ½ teaspoon kosher salt more to taste
  • ½ teaspoon black pepper
  • ¼ teaspoon Italian seasoning optional, dried
  • 2 ¾ cups half and half
  • 2 tablespoons butter

Instructions

  1. Heat a large nonstick pan over medium heat. Add the 1 pound ground pork sausage, and cook until no longer pink and lightly browned, about 5 minutes.
  2. Sprinkle the ⅓ cup all-purpose flour, ½ teaspoon Kosher salt, ½ teaspoon black pepper, and ¼ teaspoon dried Italian seasoning, if using, over the cooked sausage. Stir and cook for 1 minute until the flour is absorbed.
  3. Slowly whisk in the 2 ¾ cups half and half, then increase the heat to medium-high to bring it to a boil.
  4. Reduce the heat to low. Simmer and stir occasionally until the sauce thickens, about 5 minutes. The sauce should coat the back of a spoon. If the sauce is too thick, add more half-and-half or milk. Add the milk 1 tablespoon at a time until you reach the desired consistency. Whisk the 2 tablespoons butter into the gravy. This gives it a rich, velvety finish!
  5. Taste the gravy and season with salt and pepper if needed. Serve over biscuits, rice, or mashed potatoes!
