For the Sausage Gravy

  • 1 lb. pork breakfast sausage bulk
  • ¼ cup all-purpose flour
  • 2 ¼ cups whole milk warmed
  • kosher salt to taste
  • ground black pepper to taste
  • fresh parsley optional garnish, chopped
  • Biscuit use canned or frozen biscuits for a shortcut, or try Aunt Bee's 3-ingredient biscuit recipe for an easy homemade option, for serving

Instructions

  1. Cook the sausage in a large skillet over medium heat, breaking up the meat with a wooden spoon. When the sausage is no longer pink, use a slotted spoon to remove the cooked sausage to a plate lined with paper towels (leave the drippings in the skillet). You should have about ¼ cup of drippings. If your sausage is leaner, melt enough butter in the skillet to equal ¼ cup of fat.
  2. Whisk the flour into the hot drippings until smooth. Cook over medium heat for 2 minutes, whisking constantly.
  3. Slowly whisk in the milk and cook for 3-5 more minutes, whisking constantly, until thick and bubbly. Stir in the cooked sausage; season with salt and pepper to taste.
  4. Split the biscuits in half and spoon gravy over top.

Notes

  • Make Ahead: You can prepare the sausage gravy in advance, transfer it to an airtight container, and store in the fridge for up to 3 days. The gravy will thicken a lot as it cools, so you'll need to gradually whisk in some extra milk as you gently reheat the gravy over low heat on the stovetop.
