Sausage Gravy and Biscuits
Description
Sausage Gravy and Biscuits features a base of flaky buttermilk biscuits paired with a creamy pork sausage gravy. The sausage is browned and drained of excess grease before combining with flour, butter, and half and half to form a thick, smooth gravy. Herbs including thyme and rosemary add an aromatic touch, while crushed red pepper flakes provide a mild kick. Freshly ground black pepper seasons the dish to taste.
The gravy is cooked gently over medium-low heat while stirring often to prevent lumps and ensure the right consistency. Served hot over biscuits, this dish delivers a balance of tender biscuits with a rich, herb-scented sauce that complements the seasoned sausage.
This classic comfort food works well for weekend breakfasts or brunches and can be made ahead and reheated with a splash of half and half or milk to loosen before serving. The biscuits can be prepared in advance and frozen up to five months for convenience. For those interested, a variation includes turning this dish into a biscuit and gravy casserole.
Ingredients
- 8 buttermilk biscuit flakey
- 1 pound pork sausage
- 2 Tablespoon + 1 teaspoon(s)s all-purpose flour
- 2 1/2 cups half and half
- 1 Tablespoon butter
- 1/8 teaspoon thyme dried
- 1/8 teaspoon rosemary dried crushed
- 1/8 teaspoon red pepper flakes crushed
- black pepper to taste, freshly ground
Instructions
- Brown sausage in a large saucepan. Use a paper towel to blot out most of the grease from the pan.
- Add flour, butter, and half & half. Cook on medium-low, stirring often, for several minutes until thickened.
- Add thyme, rosemary, red pepper flakes and black pepper.
- Serve over warm biscuits.
Notes
- Make the gravy up to 2-3 days in advance; reheat gently with added half and half or milk to adjust thickness.
- For freezing, use whole milk in the gravy for better reheating texture; thaw overnight in fridge.
- Biscuits freeze well for 3-5 months and can be baked or reheated when needed.
- Season gravy to taste after reheating since flavors can mellow with storage.
