This easy sausage potato hash is an amazing one-pot breakfast or dinner.

Ingredients
- 1 tablespoon vegetable oil
- 1 1/2 cups onion white, diced
- 1 bell pepper seeds and ribs removed, chopped
- 4 cups potato diced
- 16 ounces sausage bulk
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper ground
- 2 teaspoons parsley optional, chopped
Instructions
- Heat the vegetable oil in a large skillet. Sauté the onion, bell pepper, and potatoes until the potatoes are tender. Remove the vegetables from the skillet.
- Add the sausage to skillet and cook until the sausage has browned. Return the vegetables to the skillet. Season with salt and pepper and sprinkle with chopped parsley, if desired.
