Description
This Sausage Sheet Pan Dinner involves roasting bite-sized red potatoes first with olive oil, garlic salt, and pepper to start softening and crisping. After 10 minutes, a mixture of chopped broccoli, sliced red and yellow bell peppers, green beans or zucchini, and sliced sausage links are added to the pan. They are tossed with remaining olive oil, dried basil, garlic salt, and pepper, then roasted together for 20 minutes until the vegetables are cooked through and the sausage is browned.

Ingredients
- 4 red potato washed, sliced and cut into bite-sized pieces, small
- 1 head broccoli washed and chopped
- 1 yellow bell pepper sliced and seeded
- 1 red bell pepper sliced and seeded
- 1 cup Green bean trim the ends or 1 cup sliced zucchini, fresh
- 4 sausage links sliced
- ¼ cup olive oil divided
- 1 teaspoon garlic salt with parsley flakes
- ½ teaspoon basil dried
- black pepper
- parsley if desired, fresh
Instructions
- Preheat the oven to 400°F. Line a baking sheet with aluminum foil and lightly grease it with cooking spray. (You can also use parchment paper)
- Add potatoes to the pan and drizzle with some olive oil and season with garlic salt and pepper. Bake for 10 minutes.
- Remove from oven and add the remaining vegetables and sausage slices. Drizzle with the remaining olive oil and seasonings. Toss to coat.
- Bake for 20 minutes.
