Description

Sausage Strata starts with browning uncased sausage and cooking it with onions and mushrooms until well softened and flavorful. Leafy greens such as chard, spinach, and kale are added and cooked down with dried herbs for an herbal note. The mixture is combined with cubed stale or dried bread and a touch of prepared mustard, then cooled slightly before adding a mix of beaten eggs and milk. Cheese is folded mostly in with some reserved for topping.

The assembled strata is packed into a butter-greased casserole dish and left to soak for at least an hour or overnight, allowing the bread to absorb the custard and flavors. Baking yields a cohesive custard-like texture with tender bread pockets and savory sausage bursts. Versatile garnishes or additions like sun-dried tomatoes or peppers can be incorporated in moderate amounts.

Once baked, this strata is a substantial dish perfect for brunch or a comforting breakfast and benefits from the resting period that enhances flavor melding and texture.

  • butter to grease the dish
  • 1 pound sausage uncased
  • 1 yellow onion or white onion, large, chopped
  • 1/2 pound mushroom chopped
  • 1 pound chard greens such as, chopped
  • 1 pound spinach
  • 1 pound kale
  • 1 teaspoon thyme dried
  • 1 teaspoon marjoram dried
  • 1 tablespoon prepared mustard
  • 4 cups bread dried or stale, in cubes
  • 7 ounces cheese any kind, shredded
  • 2 cups milk whole
  • 6 egg
  • salt
  • black pepper

Instructions

  1. Grease a casserole dish with butter. Break up the sausage and put in a large saute pan over medium-high heat. Brown the sausage well, stirring occasionally.
  2. When the sausage browns, add the onion and mushrooms. If you sausage is lean, add some butter. Salt everything well. Brown the mushrooms and onion.
  3. Add the chopped spinach or other greens, as well as the herbs and some pepper. Once the greens are wilted, turn off the heat and let the mixture cool.
  4. In a large bowl, mix the contents of the pan with the bread cubes and a little mustard. In another bowl, beat together the eggs and milk. Once the meat mixture has cooled enough so that it won't cook the eggs, mix everything together, including all but a little of the cheese -- you'll want some cheese to top the strata.
  5. Pack this into the casserole dish, cover an let it sit at least 1 hour, and up to overnight. Generally speaking, the harder the bread is, the longer the soak.
  6. When you're ready to bake, preheat the oven to 350°F. Cover the casserole dish with foil and bake 30 minutes, then sprinkle the remaining cheese over the top and bake uncovered another 30 minutes. Let the strata set for 10 miinutes before cutting into squares and serving.

Notes

  • Various sausages, greens, cheeses, and bread types can be used flexibly in this strata.
  • Additions like sun-dried tomatoes or roasted red peppers can be included in quarter to half cup amounts for extra flavor.
  • Allow the assembled strata to soak for at least an hour, up to overnight, especially if using very dry bread.
