Description
This Sausage Stuffing begins by cooking mild Italian sausage in butter until browned, then sautéing onions and celery until tender. Garlic is added briefly before combining the mixture with bread cubes, chicken broth, eggs, fresh sage, and parsley. Salt and pepper are added to taste. The well-mixed stuffing is transferred to a prepared pan and baked at 350 degrees Fahrenheit for about an hour.
The baking develops a browned crust while retaining a moist center that absorbs the savory flavors from sausage, herbs, and broth. The presence of fresh sage and parsley lends an herbaceous note, complementing the richness of the sausage and butter.
This stuffing is suitable for holiday meals or year-round as a flavorful side dish. It can be garnished with extra parsley after baking for added color and freshness.
The stuffing mixture can be prepared up to 8 hours in advance and refrigerated until baking. To prevent over-browning, cover with foil if necessary during the final baking minutes. Using store-bought unseasoned stuffing cubes or homemade stale bread cubes are both acceptable.
Ingredients
- 1 pound Italian sausage casings removed, mild
- 1/2 cup butter divided use
- 1 cup onion finely diced
- 1 cup celery sliced
- 2 teaspoons garlic minced
- 8 cups bread can use store bought unseasoned stuffing cubes, or bread you cut yourself, stale, cubes
- 2 3/4 cups chicken broth
- 2 egg
- 1 tablespoon sage minced, fresh leaves
- 1/4 cup parsley minced, plus more for garnish, leaves
- salt to taste
- black pepper to taste

Instructions
- Preheat the oven to 350 degrees F. Coat a 9" x 13" pan with cooking spray.
- Melt 1 tablespoon of the butter in a large pan over medium heat. Add the sausage and cook for 5-6 minutes or until done, breaking up the meat with a spatula.
- Add the remaining 7 tablespoons of butter, onion and celery to the pan. Cook for an additional 4-5 minutes or until vegetables are tender.
- Add the garlic and cook for 30 seconds.
- Place the bread cubes in a large bowl. Add the sausage mixture, chicken broth, eggs, sage, parsley and salt and pepper to the bowl.
- Gently stir until everything is well combined. Pour the stuffing into the prepared pan.
- Bake for 60 minutes. If the top starts to get overly browned before the cooking time is over, then cover the pan with foil.
- Remove from the oven. Sprinkle with additional parsley, then serve.
Notes
- Stuffing can be assembled up to 8 hours ahead and refrigerated until baking.
- If the top browns too fast, cover with foil to finish baking without burning.
- Use either store-bought unseasoned cubes or your own stale bread cut into cubes.
