  • 1 cup water
  • 1 clove garlic minced
  • ½ lemon
  • 1 tablespoon olive oil
  • 2 teaspoons butter
  • salt to taste
  • black pepper to taste

Instructions

  1. Wash beet greens and separate stems from leaves. Cut the stems into 1" pieces, and chop the leaves.
  2. In a nonstick pan, add the stems and 1 cup of water. Cover and simmer for 4-7 minutes or until they're fork-tender. Drain well.
  3. Add the garlic, olive oil, salt, and pepper to the pan, squeezing the lemon over the greens. Sauté for 2-3 minutes, or until the greens are wilted.
  4. Remove the pan from the heat, stir in the butter and salt and pepper to taste.

Notes

  • One bunch of beet greens generally comes from about 4 to 5 beets.
