Description
This recipe quickly sautés broccolini by warming extra-virgin olive oil and cooking thinly sliced garlic and red pepper flakes just until fragrant. The broccolini, trimmed and halved if thick, is added with salt and tossed in the skillet. After a couple of minutes, water is added, the pan is covered, and the broccolini steams gently for several minutes until tender but still bright green. The cover is removed and lemon juice is tossed in at the end to add a fresh acidity that complements the sautéed garlic and pepper flakes.

- 2 tablespoons water

Instructions
- Heat the olive oil in a large lidded skillet over medium heat. Add the garlic and red pepper flakes and cook for 30 seconds, then add the broccolini and salt and toss.
- Cook, tossing occasionally, for 2 minutes. Add the water, cover, reduce the heat, and cook for 3 to 5 minutes, tossing occasionally, or until tender and bright green.
- Remove from the heat, toss with the lemon juice, and season to taste.
