Sautéed Broccolini Recipe
Description
The recipe starts by heating unsalted butter in a skillet over medium-high heat, then adding fresh broccolini seasoned simply with kosher salt, black pepper, and garlic powder. The broccolini is cooked on each side for about two minutes to absorb flavors and start softening. Because broccolini stalks can vary in thickness, a quick test for fork-tenderness determines if additional steaming is needed. Adding water and covering the skillet briefly steams the broccolini to achieve a tender-crisp texture.
This cooking method preserves the vegetable's slight crunch with a rich buttery flavor and subtle garlic notes. It is designed for immediate serving to maintain texture, though leftovers can be stored in the refrigerator and reheated carefully to avoid sogginess.
The recipe suggests serving with lemon slices for optional bright acidity. Cooking times vary based on stalk thickness, so checking for tenderness is essential to avoid undercooking or over-softening.
Ingredients
- 2 tablespoons butter unsalted
- 1 bunch broccolini 8 ounces, fresh
- ½ teaspoon kosher salt or ¼ teaspoon of any other salt, including Morton kosher salt, Diamond Crystal brand
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
Instructions
- Heat the butter in a large 12-inch skillet over medium-high heat until foaming. Swirl to coat the bottom of the skillet.
- Add the broccolini and season it with kosher salt, black pepper, and garlic powder.
- Sauté the broccolini for about 2 minutes on each side until it has absorbed most of the butter.
- Check to see if the stems are fork-tender. If they are, you're done! If they're still tough (this happens with relatively thick stalks), add 2 tablespoons of water to the skillet, cover it, and steam the broccolini until the stems are tender-crisp, 1-2 minutes.
- Serve immediately. If there are liquids on the bottom of the skillet, remove the broccolini with a slotted spoon. You can serve it with lemon slices if you wish.
Notes
- Cooking time depends on the thickness of broccolini stalks; thinner stalks need less time while thicker ones require steaming.
- Test stalks for fork tenderness to determine when they are ready to serve.
- Leftovers should be stored in an airtight container in the refrigerator and can be reheated in the microwave.
- Serve immediately after cooking for best texture; the vegetable tends to become limp if stored too long.
