Sauteed Cauliflower
Description
Cauliflower florets are cooked in butter and olive oil until browned, imparting a slightly caramelized flavor and tender texture. Toasted pine nuts and golden panko breadcrumbs are prepared separately and combined as a crunchy garnish. Adding a small amount of water and covering allows the cauliflower to steam briefly, ensuring it softens through without becoming mushy. After the water evaporates, Parmesan cheese is sprinkled on top, melting slightly to add a savory note.
The optional cilantro chimichurri sauce drizzled over the dish adds brightness and a fresh herbal character, which contrasts with the nuttiness and richness of the other ingredients. This sautéed cauliflower serves well as a side dish accompanying a variety of main courses or as a vegetarian friendly dish.
Ingredients
- 4 cups cauliflower 1 large, cut into florets
- 2 tbsp pine nuts
- 2 tbsp olive oil
- 1/3 cup panko breadcrumbs
- 2 tbsp butter
- salt to taste
- 1/4 cup Parmesan Cheese shredded
Serving/Garnish
- cilantro optional) drizzled on top, as chimichurri sauce ingredient
Instructions
- Toast pine nuts in large skillet over medium heat until golden brown, stirring often, about 2 minutes. Season with salt and set aside in bowl.
- Heat oil in large skillet and add Panko breadcrumbs. Stir over medium heat and toast until golden brown. Add to bowl with pine nuts.
- Melt butter in pan and add cauliflower. Brown on medium heat for about 10 minutes, tossing often. Season with salt.
- Add 1/4 cup of water to pan and cover for 5 minutes on simmer. Remove lid and cook until all water is evaporated.
- Sprinkle Parmesan cheese, toasted Panko breadcrumbs and pine nuts on top. Drizzle the chimichurri sauce (optional) all over and serve immediately.
