Sauteed Green Beans
Description
This recipe starts by trimming and cutting green beans into one-inch pieces. They are then sautéed in olive oil with chicken broth over medium heat, which helps cook the beans thoroughly while keeping them tender and moist. The broth evaporates during cooking, concentrating flavors without making the beans soggy.
Near the end, fresh minced garlic and optional red pepper flakes are added and cooked briefly to preserve their aroma and avoid burning the garlic. Seasoned with salt and freshly ground black pepper, the green beans retain a tender-crisp texture and a bright, slightly spicy finish from the chili flakes when used.
These sautéed green beans serve well as a side dish for a wide range of meals, from poultry to pork or vegetarian entrees. Their straightforward preparation highlights the natural sweetness and freshness of the beans.
For freshness, trim the green beans before cooking and avoid overcooking to maintain their texture. Leftovers keep well refrigerated for up to a week and can be frozen for about a month, though texture softens after freezing.
Ingredients
- 1 pound green beans washed and trimmed
- 1 tablespoon olive oil
- ¼ cup chicken broth
- 1 clove garlic minced
- ¼ teaspoon red pepper flakes optional
- salt to taste
- black pepper to taste
Instructions
- Cut green beans into 1" pieces.
- Heat olive oil in a medium skillet. Add beans and broth and cook over medium heat 10-14 minutes or until the broth is evaporated or until beans are tender.
- Add garlic and chili flakes and cook 1 minute more.
- Season with salt & pepper to taste and serve.
Notes
- Trim fresh green beans by washing, drying, lining them up, and cutting off the knobby ends with a sharp knife.
- Add garlic near the end of cooking to prevent burning and preserve flavor.
- Maintain a tender-crisp texture by not overcooking the beans; cook until broth evaporates and beans are just tender.
- Leftover green beans keep in the fridge for 5 to 7 days and freeze well for about one month, although texture softens after freezing.
