Sauteed Green Beans Recipe
Description
The recipe uses one pound of green beans that are rinsed, trimmed, and blanched to preserve their vibrant color and crisp-tender texture. Sautéed in olive oil alongside minced garlic and zesty lemon peel, the green beans absorb aromatic flavors without overcooking the garlic. Adding shelled, slightly chopped pistachios provides a crunchy contrast, while grated Parmesan adds a salty, savory depth.
The sauté is quick, turning the beans frequently to ensure even heating and to meld flavors. Salt and black pepper are applied to taste, enhancing the natural freshness of the green beans and the complementary ingredients.
This sautéed green bean dish works well as a side for meats or main courses that benefit from a citrusy, nutty vegetable component. It can be served warm immediately after preparation to retain texture and flavor.
For an alternative to blanching, steaming green beans briefly until bright green and crisp before sautéing is suggested to maintain texture and color. Avoid allowing garlic to brown to prevent bitterness.
Ingredients
- 1 pound green beans rinsed, trimmed and blanched
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 tablespoon lemon zest
- 2 tablespoons pistachio shelled and chopped slightly
- 2 tablespoons Parmesan Cheese grated
- salt to taste
- black pepper to taste
Follow instructions on How To Blanch Green Beans (easy and quick, all you need is boiling water and iced water!)
Instructions
- Heat the olive oil in a large saute pan over medium-high heat. Add the garlic and lemon zest and saute stirring often for about 1 - 2 minutes or until the garlic and zest become fragrant. Don't allow the garlic to brown.
- Add the blanched green beans to the pan and stir well. Saute, turning frequently for about 2 - 3 minutes.
- Stir in the pistachios and Parmesan cheese. Saute for about 2 minutes, tossing frequently. Season with salt and pepper to taste. Serve.
Notes
- Avoid browning the garlic by adjusting heat as necessary; medium heat can be used.
- Blanching green beans keeps them crisp-tender and maintains vibrant color.
- To skip blanching, steam green beans briefly until bright green and crisp before sautéing.
- Drain steamed green beans well and avoid keeping them covered to prevent sogginess.
