Sautéed Lemon Garlic Asparagus

This sautéed asparagus dish features fresh spears quickly cooked in butter and olive oil with garlic, brightened by lemon zest and juice, and finished with a sprinkle of freshly grated Parmesan. The result is tender yet crisp green asparagus with a vibrant, savory flavor and slight acidity, highlighting the fresh ingredients.

Description

Sautéed Lemon Garlic Asparagus begins by melting butter and olive oil in a skillet over medium heat. Fresh asparagus spears, trimmed of woody ends, are added and cooked briefly to maintain a crisp texture. Minced garlic and lemon zest and juice are introduced to the pan, infusing the asparagus with citrusy and savory aromatics. The asparagus is seasoned with salt and black pepper, then cooked until just tender enough to pierce with a fork but still vibrant green. Finally, the dish is served hot with a garnish of freshly grated Parmesan cheese, which adds a subtle salty richness.

This side dish pairs well with a variety of main courses and offers a quick preparation that preserves the freshness and natural flavor of the asparagus. Its balance of buttery, garlicky, and lemon notes provides a bright, flavorful vegetable option.

Ingredients

Servings
  • 1 tsp olive oil
  • 1 tbsp butter
  • 1 lb asparagus about 15-20 spears, woody ends removed, fresh
  • 2 cloves garlic minced or pressed
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground
  • 1/2 lemon zest and juice
  • Parmesan Cheese to garnish, freshly grated

Instructions

  1. In a medium sized skillet over medium heat, melt butter and oil together. Add asparagus spears to the pan, and saute until the asparagus for about 2 minutes, then add in garlic, lemon zest and juice, and season with about 1/2 tsp salt and 1/2 tsp pepper.
  2. Keep cooking can be easily pierced by a fork but is still crisp and crunchy, about 1 or 2 more minutes. The asparagus should still be a lovely green color not an olive green or a 'canned' looking green, that means it was cooked too far. Taste and adjust seasoning to taste.
  3. Serve hot, sprinkled with parmesan cheese.
