Sautéed Mushrooms Recipe

The Sautéed Mushrooms Recipe uses a mixture of gourmet mushrooms cooked in butter, olive oil, garlic, and white wine. The mushrooms brown slightly in a hot skillet enhancing their texture and flavor. The finishing touch of wine cooked down adds acidity and depth. This preparation brings out the natural earthiness of the mushrooms while providing a tender yet slightly crisp bite.

Description

The Sautéed Mushrooms Recipe features a combination of gourmet mushrooms such as cinnamon cap, oyster, king oyster, and shiitake, supplemented with cremini mushrooms if needed. These mushrooms are cooked in a blend of butter and olive oil in a hot heavy pan or cast iron skillet to encourage browning. Garlic is added briefly to infuse aroma without burning. White wine is introduced and reduced completely, concentrating the flavors and creating a subtle acidity that balances the richness of the butter. The mushrooms are seasoned with salt and black pepper, enhancing their natural umami without overpowering them. The resulting dish offers a tender texture with a slight caramelization on the edges.

Sautéed mushrooms prepared this way can be served warm as a side dish or as a flavorful topping for steaks, chicken, or toasted bread. They pair well with simple main courses that allow their savory character to stand out.

If avoiding cooking with wine, you can substitute with half grape juice mixed with diluted white wine vinegar or use stock, though wine provides the best flavor. Using a variety of mushrooms improves the complexity of the dish.

Ingredients

Servings
  • 2 tbsp butter set 1 tbsp aside
  • 1 tbsp olive canola or other oil
  • 1 ½ pound gourmet mushrooms
  • 5 cloves garlic diced
  • ¼ cup white wine
  • 1 tsp salt + more to taste if desired, sea salt
  • 1 tsp black pepper to taste

Instructions

  1. Heat a heavy pan or cast iron skillet.
  2. Add oil and 1/2 butter.
  3. When almost smoking, add mushrooms.
  4. Stir and let mushrooms brown slightly season with salt and pepper.
  5. Add remaining 1/2 butter and garlic.
  6. Stir quickly to heat garlic, but be careful not to let it burn.
  7. Add white wine (caution- it will release a LOT of steam when it hits the pan).
  8. Let wine cook down.
  9. When liquid is fully absorbed about 15 minutes, taste.
  10. Add any additional salt to taste (dont add before, the butter may make your mushrooms saltier than you realize when cooked down).
  11. Serve warm!

Notes

  • Use a variety of gourmet mushrooms like cinnamon cap, oyster, king oyster, and shiitake, filling with cremini if needed to reach the amount.
  • Substitute wine with a mixture of grape juice and diluted white wine vinegar, or with stock if you do not cook with wine, recognizing it will alter the flavor.
