Description

This recipe starts by slicing cleaned brown or white mushrooms into thick slices. They are tossed quickly with soy sauce, then cooked in a hot pan with butter and olive oil without stirring initially, allowing one side to brown. White wine may be added to deglaze and evaporate, enhancing taste and moisture. Minced garlic and thyme are added late to avoid burning and to impart aroma. The mushrooms finish tender with flavorful browning and a balance of savory and herbal notes.

These mushrooms can be served alongside meats, incorporated into pasta, or used as a flavorful topping. Fresh chopped chives add color and mild onion flavor if desired.

Ingredients

  • 1 pound brown mushrooms or white, cremini, or portobello mushrooms
  • 1 tablespoon soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • ¼ cup white wine optional
  • 1 prig thyme or a pinch of dried thyme, fresh
  • 2 cloves garlic minced
  • chives for garnish, optional, chopped fresh

Instructions

  1. Clean mushrooms by gently wiping with a paper towel or using a mushroom brush. Slice into thick slices (about ½").
  2. Add butter and oil to a pan and heat over medium high heat.
  3. Quickly toss the mushrooms & soy sauce (do not do this ahead of time, this will remove too much moisture from the mushrooms)
  4. Add the mushrooms to the pan and toss with olive oil mixture. Do not stir allow to cook about 4-5 minutes without disturbing to brown on one side.
  5. Add white wine if using and allow to evaporate. Add garlic and thyme (if using). Continue cooking an additional 3-4 minutes stirring occasionally until cooked.
  6. Season with salt & pepper to taste.
