Sauteed Shredded Zucchini with Parmesan Cheese
Description
This recipe starts by shredding trimmed zucchini and squeezing out excess water to prevent sogginess. The shredded zucchini is then sauteed in olive oil over medium heat until it becomes tender, usually 5 to 7 minutes. Garlic is added near the end of cooking to preserve its aroma and flavor without burning.
Once the garlic is incorporated, a cheese mixture consisting of Parmesan for sharpness, and white cheddar or mozzarella for melting and creaminess, is stirred in and allowed to melt into the warm zucchini, creating a cohesive, soft dish with a fresh vegetable base accented by cheese flavor.
The finished dish can be topped with additional grated Parmesan for extra savory flavor and a slight texture contrast. This sauteed zucchini pairs well as a vegetable side or light accompaniment to main courses.
Ingredients
- 2 lbs. zucchini (ends trimmed)
- 1 Tablespoon olive oil (or non-stick cooking spray)
- 1 to 2 garlic minced, cloves
- 1/2 to 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 cup cheese (a mix of parmesan, white cheddar, or mozzarella)
Instructions
- Wash the zucchini and cut the ends off. Grate each zucchini with a grater (or use the grating attachment on a food processor).
- Transfer to a bowl and squeeze zucchini with a paper towel or clean dish towel to remove excess water. Zucchini holds a lot of water so this will help in the cooking process.
- Heat a large skillet over medium heat. Drizzle with olive oil or spray with cooking spray. Add zucchini and cook for 5-7 minutes or until tender. Add garlic with 1 minute left of cooking time. Stir in cheese and let it melt. I prefer to do a mix of parmesan cheese (for flavor) and white cheddar or mozzarella (because it melts so well and makes it creamy).
- Top with more grated parmesan cheese.
