Sautéed Zucchini with Plum Tomatoes
Description
Sautéed Zucchini with Plum Tomatoes brings together sliced zucchini and diced plum tomatoes cooked with smashed garlic cloves in extra virgin olive oil. The garlic is first sautéed until golden, releasing its aroma, then the zucchini is cooked on each side to develop slight caramelization. Plum tomatoes are added later along with herbes de Provence and seasoning to simmer gently and meld flavors. The dish uses simple seasoning of kosher salt, black pepper, and Provencal herbs to highlight the vegetables’ natural flavors.
The result is a tender, flavorful vegetable side that can be served in equal portions four ways. It pairs well with grilled meats or as a light vegetarian addition to a meal. The recipe emphasizes controlling cooking times to maintain zucchini’s appealing texture while melding it with fresh tomato juices and fragrant herbs.
