Description
The sauce starts with sautéed shallots in butter to develop a soft base. Adding red wine, fresh blueberries, thyme sprigs, brown sugar, balsamic vinegar, and kosher salt creates a simmering mixture that reduces by half, concentrating flavors. The sauce becomes syrupy as it cools, maintaining a pourable consistency with visible softened blueberries. Removing thyme sprigs last preserves their herbal aroma without overpowering. Optionally, freshly ground black pepper enhances the savory notes.
This sauce offers sweet-tart complexity with earthy herbs and works well as a sauce for meats or cheese boards. The reduction method intensifies flavors while retaining freshness from the berries. Though thinner than typical sauces when hot, it thickens slightly off heat for better coating.
The recipe specifies using about 2 tablespoons of shallot, so precise mincing ensures proper flavor distribution.
Ingredients
- 2 tablespoons butter unsalted
- 1 shallot , finely minced*
- 3/4 cup red wine
- 1 1/2 cups blueberries fresh
- 2 thyme sprigs, fresh
- 2 tablespoons light brown sugar
- 1 tablespoon balsamic vinegar
- 1 teaspoon kosher salt coarse
- 1/4 teaspoon black pepper optional, freshly ground
Instructions
- Heat the butter in a saucepan over medium heat.
- Add the shallots and saute until soft, approximately 3-4 minutes.
- Stir in the red wine, blueberries, thyme, brown sugar, balsamic vinegar and kosher salt. Bring to a low simmer, stirring every so often. Reduce by half, approximately 10-15 minutes. Sauce will be thinner than you'd expect and will start to thicken and become syrupy as it cools.
- Remove the sauce from the heat, fish out the thyme sprigs and set aside to cool.
- Add the freshly ground pepper at this time, if desired.
