Ingredients
- ¾ cup cottage cheese I like Good Culture, low fat
- 2 tablespoons chives divided, minced, or finely minced scallion greens
- black pepper freshly ground
- ½ cup Persian cucumber sliced
- ½ bell pepper seeded and chopped, medium
- 10 grape tomato halved
- 1 tablespoon chopped (roasted shelled pistachios)
- kosher salt
Instructions
- In a small bowl, combine cottage cheese with 1 tablespoon chives and pepper, to taste.
- Layer cucumbers, peppers and tomatoes on top then garnish with remaining 1 tablespoon chives and pistachios.
- Sprinkle with a pinch of salt and pepper, to taste.
