  • 2 tablespoons chives divided, minced, or finely minced scallion greens
  • black pepper freshly ground
  • ½ cup Persian cucumber sliced
  • ½ bell pepper seeded and chopped, medium
  • 10 grape tomato halved
  • 1 tablespoon chopped (roasted shelled pistachios)
  • kosher salt

Instructions

  1. In a small bowl, combine cottage cheese with 1 tablespoon chives and pepper, to taste.
  2. Layer cucumbers, peppers and tomatoes on top then garnish with remaining 1 tablespoon chives and pistachios.
  3. Sprinkle with a pinch of salt and pepper, to taste.
