Description
To make Savory Oatmeal, garlic and grated fresh ginger are sautéed briefly in butter to release their aromas. Sliced mushrooms are added and cooked until softened. Vegetable broth is poured in and brought to a boil before stirring in rolled oats. The oats simmer until thickened, absorbing the broth and flavors. Chopped spinach is stirred in toward the end, wilting slightly while retaining a bright green color.
Toasted sesame oil is added at the finish for a nutty aroma and depth. The oatmeal can be salted to taste, and served hot, offering a creamy yet textured meal alternative that combines grain and vegetables with fragrant seasonings. This dish can serve as a nourishing breakfast or light meal.
Ingredients
- 1 clove garlic $0.08, minced
- 1/2 tsp ginger $0.05, grated fresh
- 4 mushrooms $0.62
- 1 tsp butter $0.04
- 1 cup vegetable broth $0.13
- 1/2 cup rolled oats $0.20, old-fashioned
- 1/2 cup spinach $0.19
- 1/2 tsp sesame oil $0.05, toasted
Instructions
- Mince the garlic, grate the ginger, and slice the mushrooms.
- Add the butter, garlic, and ginger to a small saucepot. Sauté over medium heat for 1-2 minutes.
- Add the mushrooms and continue to sauté for a few minutes more, or until the mushrooms have wilted a bit.
- Add the vegetable broth to the saucepot, turn the heat up to medium-high, and bring the broth up to a boil.
- When the broth reaches a boil, add the rolled oats and stir to combine. Allow it to return to a boil, then reduce the heat to medium low. Let the oats simmer for about 5 minutes, or until thickened.
- While the oats are simmering, roughly chop the spinach. Stir the spinach into the thickened oats, along with the toasted sesame oil.
- Taste and add salt to your liking, if needed, then top it off with your favorite toppings. Serve hot!
