This Savory Rhubarb Salsa features tart, finely diced rhubarb balanced with sugar and red wine vinegar, combined with red onion, jalapeño, cilantro, and lime juice. The salsa delivers a bright and refreshing zing, with mild heat and aromatic spices coriander and cumin complementing the fresh ingredients. It’s a versatile condiment that pairs well with tortilla chips, margaritas, or as a topping for grilled pork or sausages.

Description

Savory Rhubarb Salsa highlights diced rhubarb that is gently macerated with sugar, vinegar, and salt to soften its tartness while preserving a crisp texture. The addition of finely chopped red onion, jalapeño, and fresh cilantro introduces layers of sharpness, mild heat, and herbaceous freshness. Lime juice brightens the salsa, while ground coriander and cumin add subtle earthy warmth.

The salsa is stirred together and seasoned to taste, providing a balance of tangy, spicy, and sweet notes. It can be served chilled or at room temperature, making it a lively accompaniment for tortilla chips or a flavorful complement to grilled meats such as pork or sausages. The method of maceration enhances the rhubarb’s flavor without losing its texture, creating a unique take on traditional salsa.

Allowing the rhubarb to sit with sugar before combining the other ingredients is key to taming its sharpness without softening it too much. Adjust seasoning with salt and pepper before serving to suit personal taste preferences.
