Description

This recipe begins by slicing sweet potatoes into rounds about three-quarters of an inch thick and coating them in melted butter mixed with salt, pepper, garlic powder, onion powder, and thyme. The slices roast on an olive-oil-sprayed sheet pan until fork-tender. After cooling briefly, each slice is gently smashed with a fork to increase surface area and crispiness potential.

The smashed potatoes are then sprayed with more olive oil, topped with freshly grated Parmesan cheese, and broiled on a high oven rack for a few minutes.   • 3 long (thin sweet potatoes (10 ounces each))
  • 2 tablespoons butter melted, unsalted
  • ¾ teaspoon kosher salt
  • black pepper to taste, freshly ground
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 teaspoons thyme plus more for garnish, chopped fresh
  • ¼ cup Parmesan Cheese freshly grated
  • plain Greek yogurt optional, nonfat, for serving

Instructions

  1. Spray a sheet pan with olive oil.  Preheat oven to 425 degrees F.
  2. Wash and dry sweet potatoes then cut each into ¾-inch thick round slices.
  3. In a large bowl, combine melted butter with salt, pepper, garlic powder and thyme.  Add sweet potatoes and toss to evenly coat.
  4. Spread sweet potatoes in an even layer on the prepared sheet pan.  Bake for 25 minutes, or until fork tender. Remove and allow to cool for 5 minutes.
  5. Adjust oven rack to the second from the top and switch oven to high broil.
  6. Using a fork, gently smash each slice.
  7. Spray lightly with olive oil then top each with a sprinkle of Parmesan cheese and return to upper middle rack of the oven.
  8. Broil for 3-5 minutes, until cheese is melted, and edges are crispy.
  9. Garnish with thyme and a small dollop of yogurt, if using.
