Savory Sweet Potato Casserole

This Savory Sweet Potato Casserole highlights baked sweet potatoes whipped fluffy and combined with black beans, jalapeños, and sharp cheddar cheese. Layered with fresh spinach and optional toppings like diced tomato, green onions, or Greek yogurt, it delivers a warm, creamy, and mildly spicy side or main dish. The casserole can be customized with various vegetables and toppings, offering a hearty and savory meal option featuring a blend of textures and flavors.

Description

The Savory Sweet Potato Casserole begins by baking or microwaving sweet potatoes until soft and fluffy. The sweet potato flesh is scooped out and whipped with spices like chili powder, cumin, and garlic powder if desired, creating a flavorful base. This is layered in a baking dish with black beans, sliced jalapeños, and shredded sharp cheddar cheese, then baked until the cheese melts and the casserole is heated through.

The final dish combines creamy sweet potatoes with the hearty texture of black beans and the mild heat of jalapeños. Toppings such as diced tomato, green onions, and dollops of Greek yogurt add freshness and tang to balance the richness. The casserole can be personalized with additional vegetables or toppings to suit preferences.

This casserole works well as a vegetarian main or savory side and reheats well for leftovers. Baking or microwaving the potatoes first change the cooking duration but not the overall outcome.

Ingredients

Servings
  • 3 sweet potato large
  • 2 cups spinach fresh baby, chopped or torn
  • 2 cups black beans
  • 1-2 cups  cheddar cheese grated sharp
  • 1/4-1/2 green onion bunch, chopped
  • 2 jalapeño sliced
  • ½ cup diced tomato
  • Greek yogurt optional, drizzle or sour cream for topping
  • For an extra punch of flavor season the sweet potatoes with a little chili powder, garlic powder, cumin, cayenne pepper and/or paprika.  Or you can whip the potatoes with greek yogurt and chives/scallions for a fun twist as well!  I've made this thing every which way -- its a bit addictive!

MORE TASTY TOPPING OPTIONS:

  • vegetables leftover, steamed/sauteed/roasted
  • spaghetti squash roasted
  • bell pepper
  • guacamole
  • olive
  • salsa
  • chives
  • cilantro
  • jalapeños
  • corn salsa fresh
  • red pepper flakes
  • tortilla chips crumbled
  • sweet mini peppers sliced
  • feta cheese crumbled, or goat cheese
  • green onion

Instructions

  1. Preheat oven to 350 F.
  2. Depending on your preference and time allotment, bake or microwave your sweet potatoes until soft and fluffy.  They'll take about an hour in the oven and about 15-20 minutes for three potatoes in the microwave, just remember to pierce the potato a few times with a knife or fork before cooking so it cooks evenly in the center.
  3. Once your potatoes are cooked to fluffy perfection, spoon out the centers and set the skins aside for another  recipe or pawn them off on your pup.
  4. Whip the sweet potatoes with a fork and transfer to a medium baking dish.  Pile on beans, jalapenos, and cheese and any other ingredients/veggies you want to enjoy hot, then pop it in the oven until the cheese is hot and melted.
  5. In about 15 minutes or so you'll have the perfect base for all your fresh toppings! I added fresh tomato, green onion, extra jalapenos, and a big dollop of greek yogurt to mine.  Load it up with anything your heart desires and dig in!  This will reheat marvelously the next few days, if any manages to make it to the next day. Glorious!

Notes

  • Baking sweet potatoes takes longer but enhances natural sweetness; microwaving is faster for convenience.
  • The casserole can be customized with various toppings like guacamole, salsa, or feta cheese.
  • Leftovers reheat well and can be enjoyed for subsequent meals.
