Savory Waffles Recipe with Bacon & Cheddar

These savory waffles combine the hearty texture of cornmeal with the sharp flavor of cheddar cheese and crispy bacon. The batter uses buttermilk and eggs to create waffles that are crisp on the outside and tender inside, enhanced by the addition of fresh chives. They are cooked in a waffle iron to golden perfection and can be served with an over-easy egg and a choice of syrup or sour cream for a balanced breakfast or brunch dish.

Description

The Savory Waffles Recipe with Bacon & Cheddar makes use of a blend of flour, cornmeal, and cornstarch to create a waffle base that is both tender and slightly crunchy. The inclusion of cooked, crumbled bacon and sharp cheddar cheese adds a savory depth and richness. Buttermilk in the batter provides a subtle tang and helps create a light, airy texture. Fresh chives introduce a mild onion-like flavor, complementing the other savory ingredients. The waffles are cooked in a preheated waffle iron sprayed with non-stick spray for easy release and an even crust.

These waffles have a balance of crispy edges from the cornmeal and softened pockets from the cheese and butter, delivering a multi-textured bite. With cooked bacon integrated, every bite carries salty, smoky notes. Serving suggestions include topping with an over-easy egg for extra richness and either pure maple syrup to add a touch of sweetness or a dollop of sour cream for a creamy contrast. These components combine for a versatile dish that works well for breakfast or a casual brunch.

To store, keep the waffles in an airtight container in the refrigerator for up to 4-5 days. They can also be frozen for 3-4 months. Using approximately ½ to ⅔ cup of batter for each waffle generally works best depending on the size of your waffle iron. Allow the waffle iron to preheat fully before cooking to ensure a golden crust.
