Savory Waffles with Spinach, Ham, and Cheese

Savory waffles combining chopped spinach, sliced deli ham, and shredded cheddar create a hearty batter thick enough to hold mix-ins. The batter is made with all-purpose and whole wheat flours, baking powder, garlic powder, melted butter, and milk. Cooking on a waffle iron yields golden, crisp waffles with a savory, cheesy, and slightly garlicky profile. The dish works as a unique breakfast or brunch option served with sour cream and hot sauce.

Description

The waffle batter is assembled by tossing together roughly chopped spinach, ham slices, and cheddar cheese with flours, baking powder, garlic powder, and salt. Adding milk and melted butter moistens the thick mixture, which can be adjusted for consistency but should not be pourable. Cooking in a preheated, oiled waffle iron produces crisp, golden waffles with uneven pockets where the ingredients are distributed.

The flavors feature the saltiness of ham and sharpness of cheddar balanced by mild garlic powder and fresh spinach. The texture contrasts a crisp exterior with a tender, slightly chewy interior modulated by the bits of meat and greens.

Serving suggestions include toppings like sour cream or hot sauce to add creaminess or heat. Keeping finished waffles warm on a wire rack in a low-temperature oven prevents sogginess before serving multiple.

This recipe offers an inventive way to enjoy waffles beyond sweet applications, making a suitable savory brunch or light meal with components commonly found in home kitchens.

Ingredients

Servings
  • 4 cup spinach roughly chopped, baby, loosely packed
  • 4 lices ham roughly sliced, deli
  • 1 cup cheddar cheese shredded
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp garlic powder
  • 2 tsp baking powder
  • 2 pinches salt
  • 1 to 1 1/4 cup milk
  • 4 tbsp butter melted
  • cooking spray

Instructions

  1. Preheat the waffle iron to medium to medium-dark setting.
  2. In a large mixing bowl, combine spinach, deli ham slices, and cheddar cheese. Add the flours, baking powder, garlic powder, and salt. Toss together roughly with kitchen tongs.
  3. Pour in milk and melted butter and toss everything with kitchen tongs to moisten. The batter will be on the thick side. Add more milk if you prefer a looser batter—but this is not a batter that you pour.
  4. Oil spray the hot waffle iron if needed. Put a fourth of the waffle batter on the hot waffle iron and close the lid (Flip it upside down if your waffle iron has the feature). Cook until golden and crisp. (Waffle irons vary in cooking time, so adjust the time accordingly.)
  5. Gently take the waffle out of the iron and place on a wired rack. Serve the waffles with sour cream and hot sauce or other favorite topping.
  6. To keep these waffles warm, keep them in a warm 175˚F oven while you cook the next one. Make sure to place the waffles on a wire rack to prevent them from getting soggy.
