Scalloped Potato Bundt

Scalloped Potato Bundt is a classic cheesy potato dish with a twist. Thin potato slices layered in a bundt pan with parmesan cream sauce and cheddar cheese.

Ingredients

  • 2 tablespoons butter melted, unsalted
  • 2 pounds yukon potatoes
  • 1 cup heavy cream
  • 2/3 cup Parmesan Cheese grated
  • 1 teaspoon garlic powder , or 2 cloves minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 2 cups cheddar cheese , shredded

Instructions

  1. Preheat oven to 400 degrees and spray bundt pan with baking spray (or use silicone bundt pan).
  2. Using a mandoline, slice the potatoes very thinly (about 1/8" inch thick) and toss well with melted butter.
  3. Add a thin even layer of potatoes covering the bundt pan and sprinkle with a 1/4 cup cheddar cheese.
  4. Carefully add in the rest of the mixture and potatoes in an even flat set of layers, alternating with cheddar cheese between layers.
  5. In a large bowl whisk together the heavy cream, grated Parmesan cheese, garlic powder, salt and pepper.
  6. Pour the heavy cream mixture over the potatoes and cheese carefully.
  7. Cover with foil and cook for 1 hour.
  8. Remove foil and cook for 40-45 minutes until golden and crispy.
  9. Let rest in the bundt pan for 20 minutes before using a plate to help flip it over carefully.
