Scallops – How to Cook Scallops

This scallops recipe shows a baked dish combining bay scallops and sautéed mushrooms in a creamy white sauce. The sauce is a cheese-flavored béchamel seasoned with Old Bay seasoning. Bacon strips cover the top before baking to add savory aroma and richness. The result is tender scallops with a mild mushroom accompaniment and a smooth, slightly spiced sauce.

Description

The method involves arranging bay scallops in a buttered casserole dish while preparing sautéed mushrooms with fresh thyme in butter and seasoning. White wine is cooked off from the mushrooms, then the thyme is removed. A sauce is made by forming a roux of butter, flour, and salt, then whisking in milk to create a thickened béchamel. Old Bay seasoning is added for flavor. After removing the sauce from heat, grated mild cheddar cheese is stirred in gradually to melt evenly.

The cheesiest sauce is poured over the scallops and mushrooms, then strips of bacon are layered on top before baking at 350°F for about thirty minutes. This creates a rich, creamy texture with a golden, savory bacon crust complementing the tender scallops and mushrooms.

This dish makes a substantial appetizer or entrée, pairing well with simple side dishes to balance richness. It requires moderate oven time but little active preparation.
