Scottish Oat and Walnut Biscuits
Description
The preparation involves finely grinding oats and walnuts in a food processor before combining with oat flour, brown sugar, salt, and baking soda. Buttermilk and melted butter are added and pulsed until the mixture forms a cohesive dough. If too wet, additional flour can be incorporated. The dough is rolled to about 3/8 inch thickness and cut into 2 1/2 inch rounds. Pricking the crackers with a fork is optional as they do not puff while baking. Baking at 350°F yields biscuits with a crisp bite and dense texture from the whole oats and walnuts.
These biscuits are well suited as an accompaniment to soups or stews or enjoyed alone as a wholesome snack. Their oat and nut composition provides a satisfying, rustic flavor. They can be stored in airtight containers to maintain crispness.
Ingredients
- 1 cup walnut pieces
- 1 cup old fashioned oats
- 1 1/2 cups oat flour
- 2 Tbsp brown sugar
- 1 tsp salt
- 1/2 tsp baking soda
- 1/2 cup buttermilk
- 1/4 cup butter melted
Instructions
- Preheat your oven to 350F.
- Put the oats and the walnuts in the bowl of a food processor and pulse until finely ground
- Add in the oat flour, sugar, salt and soda and pulse to combine.
- Pour in the buttermilk and melted butter and pulse until the dough comes together.
- Turn out onto a floured surface and bring the dough together. If it feels wet, knead in a little more flour.
- Roll out the dough to about 3/8 inch thick. Cut with a 2 1/2 inch cookie cutter. You can prick the crackers with the tines of a fork if you like the look, but it's not necessary, the dough doesn't rise or puff up.
- Bake on an ungreased baking sheet for about 20 to 25 minutes.
- Cool on a rack. Store in an airtight container.
