Ingredients
- 1 cup (6 oz/170 g) shelled raw pistachios
- ¼ cup (2 oz/57 g) plus ¼ cup (2 oz/57 g) granulated sugar, divided
- 2 tablespoons plus 2 cups (16 fl oz/480 ml) whole milk, divided
- 2 tablespoons (1 oz/28 g) butter
- ½ teaspoon almond extract
- 1 large egg (at room temperature)
- 2 large egg yolks (at room temperature)
- 2 tablespoons cornstarch
- ¼ teaspoon salt
- Whipped Cream (for serving, optional)
