Description
This dish features a seafood blend cooked quickly in a skillet with garlic sautéed in olive oil and butter. Ingredients
- 1 lb (500g) seafood blend (shrimp, squid and scallops)
- 8 oz (230g) spaghetti
- 1 tablespoon olive oil
- 3 tablespoons butter unsalted
- 4 cloves garlic minced
- 3 dashes black pepper ground
- 1 cup clam juice bottled
- 1/2 teaspoon salt or to taste
- 1 teaspoon crushed red pepper
- 2 tablespoons lemon juice or to taste
- 6 cherry tomato sliced into halves
- 1 tablespoon parsley chopped
Instructions
- Rinse the Seafood Blend with cold water, drain, and set aside. Pat dry with paper towels.
- Bring a pot of water to a boil and cook the spaghetti according to the package instructions until al dente. Drain and set aside.
- Heat a skillet over medium heat. Add the olive oil and butter, then sauté the garlic until it turns light brown. Add the seafood blend and ground black pepper, stirring until they are halfway cooked. Next, add the clam juice, salt, crushed red pepper, and lemon juice. Adjust the flavor by adding more salt and lemon juice as needed.
- Transfer the spaghetti to the skillet and stir to combine well with the seafood blend. Add the cherry tomatoes and chopped parsley, mixing everything together. Turn off the heat and serve immediately.
Notes
- Chicken broth can replace clam juice if unavailable.
- Trader Joe's Seafood Blend is recommended, but other frozen mixed seafood can be used, including mussels or clams.
- Adding a few tablespoons of white wine to the sauce enhances depth of flavor if desired.
