Seared Shrimp Salad with Jicama, Strawberries & Avocado

This healthy dinner salad will leave your family begging for more. Succulent shrimp, crunchy jicama, sweet strawberries and creamy avocado. What's not to love?!

Ingredients

  • ¾ pound Shrimp peeled, large raw
  • ½ teaspoon salt
  • ½ teaspoon black pepper ground
  • ¼ teaspoon garlic powder
  • 1 ½ teaspoons olive oil
  • 4 cups mixed greens
  • 1 jicama peeled & cut into strips (about 2 ½ cups, small
  • 2 cups strawberries sliced
  • 1 avocado chopped

The Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons lemon juice fresh
  • 1 teaspoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper ground
  • 3 tablespoons parsley flat-leaf, minced

Instructions

  1. Place the shrimp in a medium-sized bowl and season with the salt, pepper and garlic powder.
  2. Heat the olive oil in a large nonstick skillet set over medium-high heat.
  3. Add the shrimp and cook until they are just cooked through, about 1 minute per side. Remember that they will continue to cook a bit after being removed from the pan.
  4. In a large bowl, toss together the shrimp, mixed greens, jicama, strawberries and avocado. Toss with the dressing to coat.
  5. Divide between 4 dinner plates. Serve.

The Dressing:

  1. In a small bowl, whisk together the olive oil, lemon juice, agave nectar, salt and pepper. Stir in the parsley.
